Mud Cake Magnifique

with Chocolate Mascarpone Mousse & Ganache Bittercream

How does one go about making the PERFECT chocolate cake? I'd never done it before, and therefore went about it quite deliberately. I consulted cookbooks and cooking websites. Call friends. Window-shopped the pastry sections of my favorite bakeries. The perfect chocolate cake, I decided, (and one inspired by someone so delectably adorable) had to be simple. No frufru decor or garnish. It should be easy enough to whip up for grilled-pizza Friday's, but elegant enough to entertain at a garden party lit by candles hanging from trees tucked in baby food jars. It didn't come out right the first time, a bungled mess of brownie-like bits. It didn't work the second time. However, as it is with many worthy endeavors, a lot of tinkering and winkering was ultimately worth the price of patience. Nie's Mud Cake is everything Nie is: divinely beautiful inside and out.

8 oz. unsweetened chocolate (8 squares)
¾ c. olive oil
2 c. sugar
4 eggs
1 c. powdered sugar
½ tsp. salt
½ c. cocoa powder
1 c. flour
1 c. buttermilk
1 tsp. baking powder*
½ tsp. baking soda
In a microwave, melt squares of chocolate with olive oil. Once melted, beat until smooth then add sugars and egg. Beat again until well creamed. Add remaining ingredients. Beat just until all ingredients are incorporated. (If you are baking BELOW 5000 feet altitude, double baking powder and add an additional 1/2 cup of flour). Pour batter into two 9-inch cake pans that have been generously greased & dusted with cocoa powder. Bake in an oven preheated to 375 degrees for 26-28 minutes, or just until center of cake springs back to the touch. Remove from oven. Allow to cool before inverting on a cooling rack and removing from pan. Before layering cake, use a knife to gently cut away any uneven parts at the top or sides of the cake. You'll want a nice, even surface to begin with in order to have your finished product look amazing.

Mascarpone Mousse
1 c. whipping cream
¼ c. sugar
1 c. 60% Bittersweet cacao chips
8 oz. mascarpone

In a large bowl, whip whipping cream until fluffly. Add sugar & mascarpone and whip until smooth. In a small bowl, melt chocolate chips in microwave, stirring every thirty seconds until smooth. Chocolate should not be warm to the touch, if it is, allow it to cool just slightly before spooning the melted chocolate into the whipping cream mixture & beating until light and fluffy. Spoon carefully atop one layer of cake. Spread evenly, then top with the second layer of cake. Refrigerate until ready to frost.

Bittercream Frosting
1 pint heavy cream
11.5 oz. 60% Bittersweet cacao chips
½ c. butter
4-5 c. powdered sugar

In a medium saucepan, melt chocolate chips and heavy cream until a thick, smooth ganache forms, to keep the mixture from burning, stir constantly. Put in fridge until chilled. Remove from fridgidaire and beat in butter & powdered sugar until frosting is a spreadable consistency. Frost. Chill cake. To serve, remove from fridge 10-15 minutes before serving.

Grammy's Banana Bread

Grammy's Banana Bread (not my Grammy)

2 very ripe bananas, really mashed & set aside
1 stick of butter, melt in small sauce pan & set aside
1 1/2 C all purpose flour
3/4 C Sugar
1/4 C milk
2 tsp lemon juice
1 tsp baking soda
1/2 tsp salt

Directions:
In a shaker container with cover, shake eggs, milk & lemon juice.

Use largw mixing bowl. Add flour, sugar, salt & baking soda. Mix lightly.

Add milk, egg, lemon juice mixture. Stir with wooden spoon. Then add mashed bananas and stir. Lastly add melted butter and mix completely (not too much).

Pour into greased 9x5 loaf pan (or as we did, mini individual sized pans) and bake at 350 for 50 - 55 - 60 minutes (though since our batter was divided between 3 mini pans, it only took 40 minutes) on middle shelf. Bread will spring back when touched lightly, and toothpick will come out clean if inserted in center.

Wrap in tin foil or plastic wrap after cooled completely to let get moist overnight.

Brewer's Blondies

Brewer's Blondies
Yield: 24

For the ultimate snack, place one Brewer's Blondie on a microwave-safe dish and heat on high for 15 seconds. Remove the blondie from the microwave oven and top it with one heaping scoop of vanilla ice cream. Let the warmth of the blondie melt the ice cream for a few moments, then serve immediately.

2 1/3 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon salt
2 tablespoons malted milk powder
14 tablespoons unsalted butter, softened, cut into 1-inch cubes
1 3/4 cups firmly packed dark brown sugar
2 large eggs
2 teaspoons pure vanilla extract
3/4 cup malted milk balls (like Whoppers or Maltesers), coarsely chopped in a food processor
3/4 cup (9 ounces) semisweet chocolate chips
3/4 cup toasted walnuts, chopped
Vanilla ice cream, to serve

Preheat the oven to 350 degrees F. Butter the bottom and sides of a 9-by-13-inch baking pan.

In a medium bowl, whisk the flour, baking powder, salt and malted milk powder together.

In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and brown sugar on medium speed until completely combined. Scrape down the bowl, add the eggs and vanilla, and beat until combined.

Add the flour mixture in two batches until just combined. Add the malted milk balls, chocolate chips and walnuts and beat until just combined, about 10 seconds. The mixture will be thick. Turn the mixture out into the prepared pan and use an offset spatula to spread it evenly.

Bake in the center of the oven for 25 to 30 minutes, or until a toothpick inserted into the center of the blondie comes out clean.

Transfer to a wire rack and let cool for 20 minutes. These blondies taste delicious warm. Cut them into squares and serve with ice cream. They also taste great at room temperature. Once thoroughly cooled, cover tightly with plastic wrap and keep at room temperature for up to 3 days.

Sugar Cookie Bars

Sugar Cookie Bars
Ingredients:
1 stick of butter, softened
1 cups sugar
2 eggs
1 tsp vanilla
2 1/2 cup flour
1/2 tsp salt
1/4 tsp baking soda

Preheat to 375. Sift together the flour, salt & baking soda to combine, and set aside. Spray a 9 x 13 cookie sheet (with raised sides) with non-stick spray. Put the butter in the bowl of an electric mixer and turn on to cream the butter. Slowly add the sugar and mix until creamy, about two minutes. Add the eggs and mix to combine. Add vanilla. In three parts, add the flour mixture to the butter mixture and stir just to combine, scraping the bowl in between additions. Spread the dough in the 9 x 13 pan. Bake for 14 - 19 minutes, or until it is slightly golden around the edges. Leave in pan to cool, on a wire rack. When completely cool, spread with about 1 cup of frosting (recipe below), or to taste. Wait until frosting has set a bit before cutting, at least a half hour.

Buttercream Frosting this recipe makes a lot more than you'll need for this, but it stores really well in the frig. I just make it in big batches and save it for future use.
Ingredients:
1 1/2 C solid white vegetable shortening
2 teaspoons clear vanilla extract
1/3 C + 2 tablespoons warm water
a 2 LB bag of confectioner's sugar

Add shortening to the electric mixer bowl and turn on to cream it. Add 1/2 the sugar and mix on low to combine (you'll certainly want your bowl's dust lid/shield thing on at this point!). Add the warm water and mix to a paste. Once it is creamed, add the rest of the sugar. Mix. Add the extract. Mix to combine completely, scraping the sides of the bowl occasionally. Then, turn mixer to high and beat to about 8 minutes. Store in the frig for up to 8 - 12 weeks (seriously!).

Magnolia's Banana Pudding

  • 1 (14-ounce) can sweetened condensed milk

  • 1 1/2 cups ice cold water

  • 1 (3.4-ounce) package instant vanilla pudding mix (preferably Jell-O brand)

  • 3 cups heavy cream

  • 1 (12-ounce) box Nabisco Nilla Wafers (no substitutions!)

  • 4 cups sliced ripe bananas

  1. In a small bowl, on the medium speed of an electric mixer, beat together the sweetened condensed milk and water until well combined, about 1 minute. Add the pudding mix and beat well, about 2 minutes more. Cover and refrigerate for 3-4 hours or overnight, before continuing. It is very important to allow the proper amount of time for the pudding mixture to set.

  2. In a large bowl, on the medium speed of an electric mixer, whip the heavy cream until stiff peaks form. Gently fold the pudding mixture into the whipped cream until well blended and no streaks of pudding remain.

  3. To assemble the dessert, select a large, wide bowl (preferably glass) with a 4-5-quart capacity. Arrange one-third of the wafers to cover the bottom of the bowl, overlapping if necessary, then one-third of the bananas and one-third of the pudding. Repeat the layering twice more, garnishing with additional wafers or wafer crumbs on the top layer of the pudding. Cover tightly with plastic wrap and allow to chill in the refrigerator for 4 hours - or up to 8 hours, but no longer! - before serving.

Not Yo Mama's Banana Pudding

Not Yo Mama’s Banana Pudding by Paula Deen

Ingredients:

2 bags of Pepperidge Farms Chessman Cookies (Nilla Wafers, or any cookies of your liking)

3-5 Bananas, sliced

2 cups cold milk (I use Non-Fat)

1 box of French Vanilla pudding (I use fat free/sugar free)

1 Eight Oz. Package of Cream Cheese (I use lowfat…nonfat is disgusting in this recipe)

1 Fourteen Oz. Can of Condensed Milk (again I use Fat Free/Sugar Free)

1 Twelve Oz. Container of Frozen Whipped Topping (Fat Free/Sugar Free Cool Whip)

Line bottom of 12×9x2 glass dish with cookies, then bananas.

Combine milk and pudding and let sit for five minutes or so.

In a seperate bowl (or your Kitchenaid) whip together cream cheese and condensed milk until smooth. Fold in whipped cream with pudding, then mix all together with cream cheese mixture until smooth and creamy. Pour into dish over cookies/bananas, then layer top with additional cookies. Refrigerate until ready to serve.

Alabama Fudge Cake

Alabama Fudge Cake

I whipped this up as a quick birthday cake for my new friend from Alabama. Quick and easy and, according to the boys, absolutely divine.

1 pkg devil's food cake mix (no pudding)
1 cup sugar
1/4 cup cocoa
2 cups hot water
1 tsp vanilla extract
Vanilla ice cream
Chopped pecans

Prepare cake batter according to directions on package. Pour into lightly greased cake pan (13x9 in).

Stir together sugar and next three ingredients; pour over batter (it will sink to bottom of pan). Don't stir.

Bake at 350 degrees for 45 minutes. Let stand 10 minutes. Serve with ice cream and chopped pecans.
